The Homemade Seasoning (Tempero Caseiro)

The Tempero Caseiro is a convenient way to prepare, ahead of time, an ingredient which is a basis to many brazilian dishes. Basically, tempero caseiro will be found in many family refrigerators of Brazil, ready to be used when required; this is a smart time-saving culinary trick! Every family has their own version of this ingredient; but it is based on onions and garlic. Here is a basic and generic recipe for this, you are free to adapt and experiment with these ingredients - add other ingredients if you prefer, to make this YOUR tempero!

Recipe for Tempero Caseiro

* 4 onions
* 4 whole heads of garlic
* 1 cup fresh basil leaves
* 1 sprig of rosemary
* 3 fresh sage leaves
* Handful parsley
* 2 tablespoons salt
* 1/2 cup olive oil


1) Coarsely chop the onions and slice all the leaves.

2) Pour the oil in a blender with onion (which is more liquid when hit). Then add the other ingredients and liquefy until creamy.

3) Pour in a container with lid (such as a Mason Jar) and keep refrigerated, or frozen.
